The sweet delights of Nanqaisi: A Shaqlawa specialty

Apricot bread known as Nanqaisi, a beloved treat from the Shaqlawa region, is a unique dessert made by blending apricot water with a special mixture. The result is a sweet, chewy snack that’s enjoyed by many. Popular in the Shaqlawa area, it’s a tasty delicacy that requires skill but is not overly difficult to make.

The process begins by mixing two cups of apricot fruit with one cup of sugar and a dash of lemon water. This combination is then heated on the stove for about 10 minutes. A piece of paper is laid out on a tray, and the mixture is spread evenly over it. The tray is then placed in an oven heated to 170 degrees, where it bakes until it sets into a smooth, leather-like texture.

Once cooled, the apricot leather is ready to be enjoyed, offering a delightful, natural sweetness that has made it a cherished treat in the region. Though not everyone can perfect the technique, with a skilled hand, this traditional recipe is sure to delight anyone who tastes it.
